Cheesecake Brownies
"Hi Maya. We'll be having end of the year BBQ next week. Everyone was asking about your fudgy brownies. We all miss it! :)"

And there you are..the so called fudgy cheesecake brownies. I was so delighted to see my friends were enjoying it and when they commented "it's very nice", "hmm..as good as always", "i think you should open your own cake shop". Hahaahaa...is it really that good? Well...you should try this recipe to prove it :)

I got this recipe from this lovely and yummy website
A cat in the kitchen I just slightly reduce the ingredients to fit my 20x20 cm pan.

Preparation time: 35 minutes
Cooking Time: 45 minutes

You will need:

Chocolate mixture
150 gr dark chocolate
150 gr butter
80 gr icing sugar
2 eggs
83 gr plain flour

Cheese cream
60 gr icing sugar
1 egg
1/2 tsp vanilla extract (I substitute with a bit of lemon squeeze)
250 gr cream cheese

How to (I basically follow the instructions from her blog):
  • Preheat oven to 170 degree C
  • Grease & line the 20x20 pan
  • Melt chocolate in bowl over simmering water (or alternatively you can use microwave). Set aside to cool slightly
  • Cream butter and sugar until pale, add eggs, one at a time, beating well after each addition
  • Stir in the melted chocolate, then fold in the flour
  • Spread 3/4 mixture into the pan
  • In a separate bowl, beat cream cheese and sugar, add egg, and lemon squeeze until smooth
  • Spread over the chocolate base
  • Dollop remaining chocolate mixture over cream cheese
  • Layer and swirl the chocolate
  • Bake 40-15 minutes
  • Cut into square and serve
Dagmar (a cat in the kitchen blog owner) added raspberries in her cake. You may try it as well. I prefer to add more cheese ;P
